The oldest state capital city in the US is Santa Fe, New Mexico - founded in 1610! It spent 2x the time as part of Mexico than it has spent as part of the United States. Today, this beautiful city has become a hub for both interesting Latin American cuisine and amazing art, becoming the 3rd biggest art destination in the U.S.

--In the heart of downtown Santa Fe, just a block from the plaza, Chef/Owner Katherine Kagel runs Cafe Pasqual's restaurant as well as an adjoining art gallery. Over a plate of eggs, Katherine gives Gary a lesson in the heat levels of the local chili, as well as a look at how they are dried.
--Also near downtown is Sazon, a Mexican food fine dining establishment with walls lined with major art pieces. Chef/Owner Fernando Olea prepares a roasted elk with brussel sprouts and mole verde, as well as a Spanish influenced abalone dish. Even the food on the plate is displayed with an artistic flair
--Santa Fe is the home of the original 'Meow Wolf' - an interactive, immersive art 'experience' that Gary describes as part escape room, part scavenger hunt - a trippy journey into a different dimension. Assembled by a collective of artists, each room is a different artistic experience, part of a giant artistic playground that's great for families and creative kids of all ages. One original investor was Game of Thrones creator/writer George R. R. Martin.
--At The Shed, also in downtown Santa Fe, Chef Joshua Carswell prepares for Gary a green chili chicken enchilada, and then also a combo plate with a red chili enchilada with blue corn tacos. We learn about the use of blue corn in New Mexico - native to the local climate.
--At Joseph's Culinary Pub, Chef Joseph Wrede cooks in a New American style, preparing for Gary and Bobby ratatouille and a cloud cake for dessert. Inspired by the Disney animated movie, the ratatouille features charred vegetables plated in a unique way alongside fried ricotta cheese balls. The chef's 'cloud cake' is an Italian meringue that will take you to 'cloud 9'!
