This dish is a delightful blend of creamy lentils and a spicy, tangy seasoning that gives it a unique and tantalizing flavor.
cup Black gram lentils (Urad Dal)
3 cups Water
1 medium Onion, finely chopped
2 medium Tomatoes, chopped
2-3 cloves Garlic, minced
1 inch Ginger, grated
2-3 Green chilies, slit
1 tsp Turmeric powder
1 tsp Red chili powder
1 tsp Cumin seeds
1 tsp Mustard seeds
1 tsp Fenugreek seeds
1 tsp Fennel seeds
1 tsp Nigella seeds (kalonji)
1 tsp Garam masala
2 tbsp Mustard oil or ghee
2 tbsp Lemon juice or mango pickle (achaar)
Salt to taste
Fresh cilantro for garnish
Instructions:
Rinse the lentils: Rinse the lentils thoroughly under cold water until the water runs clear.

Cook the lentils: In a large pot, combine the rinsed lentils, water, turmeric powder, and a pinch of salt. Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the lentils are soft and fully cooked. Stir occasionally and skim off any foam that forms on the surface.
