Food insecurity is one of the biggest challenges facing the world today, especially as the global population continues to grow. Joel Cuello, PhD, co-lead of the U of A Health Sciences Climate Change and Human Health initiative, is researching ways to use spirulina, which is rich in protein and essential nutrients, as a nutritional solution. His goal is to find a simple, low-cost system to grow this superfood, taking it from a health food supplement to a tool to combat hunger in low-income countries around the world.
