Ingredients and tips
~1-2 lbs chicken breast or bonesless chicken
~ cooking oil
~ 2-3 medium sized shallots - If you don't have any shallots, you can use Vidalia onions, sweet onions or green onions.
~2 thumbs of fresh ginger - minced to give your sauce a burst of spice!
~4-5 cloves of fresh garlic mined. You could also used garlic powder or garlic salt.
~5-10 tbs red Thai curry paste - the spicier or thicker you want your sauce, the more paste you would use. You could also substitute red curry paste with Thai green and yellow curry paste as well.
~ 1 can unsweetened Thai coconot milk
~1-2 cups low sodium chicken broth
~ 1-2 tbs brown sugar
~ 1 tbs lime juice
~ 2 tbs fish sauce: If you don't have fish sauce, you can use soy sauce
~ basil and parsley to garnish
