Pineapple Banana Greek Frozen Yogurt
Active Time: 15 minutes
Total Time: 4 hours
Yield: 2 cups
Ingredients
• 1 cup frozen pineapple chunks
• 1 cup full fat plain Greek yogurt
• 2 bananas, sliced
• 2 tablespoons maple syrup or honey
• 1 teaspoon grated ginger
• Toasted unsweetened coconut, optional garnish
Instructions
Step 1:
Place frozen pineapple chunks, Greek yogurt, bananas, maple syrup and ginger in a food processor and blend until smooth and creamy scraping down the sides as necessary, approximately 2-3 minutes.
Step 2:
Transfer the mixture to a freezer safe container, wrap well and freeze for 45 minutes. Remove and stir the mixture folding the frozen edges into the center. Place back in the freezer for 30 minutes, remove and stir again. Repeat this process 3 more times and then freeze for at least 1 additional hour before serving. Scoop into bowls and top with toasted coconut. Store in the freezer for up to 1 month.
Note: Stirring the mixture while freezing helps to minimize the build up of large ice crystals creating a creamier texture.
