Peanut Butter Brownies

Peanut butter brownie recipe

Ingredients:
100 grams oats flour
100 grams quinoa flour
1 teaspoon baking powder
4 eggs
4 tablespoons cocoa powder
1 tablespoon peanut butter
1 tablespoon salted butter
200 grams date paste ( use Medjool or sokhari dates - soak them for few hours until soft and then just blend them in a nutribullet with 1 tsp vanilla extract)
1 teaspoon vanilla extract
1/2 teaspoon instant coffee mixed with 1 tablespoon jaggery in 100 ml hot water
Handful of peanut butter drops

Instructions:
1. In a mixing bowl, combine oats flour, quinoa flour, baking powder, eggs, cocoa powder, peanut butter, butter, and date paste. Mix all the ingredients well at the lowest speed until thoroughly combined.
2. Add vanilla extract and the instant coffee mixture (prepared with jaggery and hot water) to the batter. Mix until evenly incorporated.
3. Gently fold in the handful of peanut butter drops into the batter.
4. Butter the base of an oven-compatible glass container and line it with butter paper.
5. Pour the brownie batter into the prepared container.
6. Place the container in the preheated oven and bake at 180 degrees Celsius
for 25-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Once baked, remove the brownie from the oven and allow them to cool before slicing and serving.
