Just to help anybody who is curious, if you change the pH with lemon/lime/citric acid/malic acid/etc you may need to use a different amount of Agar powder. Agar is very forgiving though because you can just reheat your gummies and add more to achieve the desired texture.

(I learned this making acidified mandarin orange “roe” for a cocktail competition)

Healthy Fruit Gummies Recipe
Ingredients:
1 pound of strawberries
Juice of 2 lemon
1/3 cup of honey
1 teaspoon of elderberry syrup
3/4 cups of water
Agar agar** (see instructions)

Instructions:
1. Clean and dry the strawberry, then cut the tops off.
2. Add the strawberries to a food processor along with the juice of 2 lemons, honey, elderberry syrup, and water.
3. Blend until super smooth and measure your mixture.
4. For every 1 cup of blended strawberry mix you have, use 1 teaspoon of agar agar. I had close to 3 cups so I used 3 teaspoons of agar agar. Add in your agar agar and mix well.
5. Using a syringe, pipe the strawberry mixture into silicone molds. Let sit for 30 minutes.

Pro tip: If you let them sit for a few days, they dry leaving them with a concentrated flavor and chewier texture.

@hayato1544

I know damn well I’m never gonna make these but I’m still gonna watch till the end

@OctagonalSquare

You can also use pectin for a slightly different texture. It’s more like those gummy vitamins, especially the melatonin ones.

@kanemediaus

this is a life-saving (ok, mental-health-saving) recipe! Thank you!

I like how he's honest about his approach and doesn't make up some story line...like... I wasn't feeling well and just happened to have all the ingredients and made these with all my toddlers running around.

@BMathiesen

Dude, this is by far one of the most informative yet easy to understand channels and i love it. Especially as a 30 yr old single man whos sick of eating fast food im excited to try so many of these video ideas. My most exciting one is makiong my own pickles. Think ill try it this summer with my grandpa's cucumbers. Might have to ask him to plant specific ones though as im not sure regular cucumbers will work.

@taizi3

I tried and it tastes pretty good!
