As a foodie and chef, this is one of the best cooking channels on here. Ever since I found it a few weeks ago I've been binge watching. No pretentiousness, no stumbling around the kitchen, and easy to follow instructions. We even get some food history👍
I love the pizza series and would love to see more lesser known styles from say Philly or Boston... except Altoona style, that's horrid but maybe you could do it justice.

As a former delivery driver for Turano baking who used to deliver southside of Chicago (Bridgeport area) and NWI region (Gary, East Chicago, Hammond) I can confirm best food spots have the bullet proof glass.

Most places in or near Chicago use fresh cucumber in the Taziki. It's a must. They use sour cream because it's cheaper than Greek yogurt. Sour cream, graded or pureed cucumber, graded fresh garlic, lemon, salt and fresh pepper. You gotta let it set for at least 24 hours. The garlic flavor will double if not triple. So only use half a clove per 2 cups of sour cream.

Whoa! How have I never heard of this??? I am a 60+ year old, life long resident of the Sout (SIC) side of Chicago, and this is the first time I have ever heard of this sandwich. Looks like a "Must Try"!

A rotary food slicer is a must have. You don't have to invest in a pro grade Hobart or semi-pro grade slicer like seen in this video. If you're like me and only use it a handful of times a year to make thin sliced meat a cheap unit is adequate. Look for cheap slicers from a company like Chef's Choice, that might cost as little as $150, that you might find at stores like Costco. It's also great for slicing baguettes and vegetables.

Some places will even deep fry the entire sandwich,  making it a "Crispy Gym Shoe" and it's fantastic. Paired with a half pound or so of steak fries, and you've got dinner for the next three days.  Or if you hate yourself enough,  dinner for one night,  and a date with the porcelain gods

A few years back, I was driving cross-country for work and stopped at a southside spot. I saw the Gym Shoo on the menu, so I had to try it. I was blown away. Thanks for reminding me of this rad sandwich. I need to go and make one!!

Another key tell to how good the restaurant is is how scratched up the counter is from sliding change across. Cause if someone is spending they're last dollar of change on this sandwich then it's worth it hahaha
