When we cook with Coconut milk, if it has to be boiled for sometime with Vegetables, we use the second coconut milk (thinner milk). First milk (thicker milk) is added only at the end before you take it off the stove, otherwise it will split.

if you're weird like me and mushy broccoli makes you retch for some reason: cook it separately in salted water for a few minutes while the curry boils- only just until fork-tender. then rinse in cold water and set aside. add into the curry along with the spinach at the end, and it will still be green and firm when you eat it :)

I’m Italian and I’ve never made a curry dish like this before, sometimes we eat, vegan. I just made it my husband and my family love it! I’m so happy it turned out. I love the lemon and the fresh cilantro on top with sour cream! Bravisimo Molto Bene!
