blue cheese is a generic term. that one is Roquefort. blue cheeses have been shown to stimulate a brain response similar to a drug high. yes it's mold.

Whenever a Mexican food novice asks me what queso fresco and cotija are like, I tell them that queso fresco is sort of like a "Mexican feta" and cotija is like a "Mexican Parmesan". That's not really what they are, but the comparison works well for educational purposes. :)
