Kadhai Paneer Recipe:
Ingredients:
- 1 tablespoon ghee
- 1 inch chopped ginger
- 4 cloves of chopped garlic
- 1 Bayleaf
- 1 inch cinnamon
- 3 cloves
- 2 chopped green chilies
- 3 small tomatoes, chopped
- 1 large onion, chopped
- Water (as needed)
- 1 teaspoon ghee (for second pan)
- 1 teaspoon Kashmiri red chili powder
- Salt to taste
- 1 teaspoon dry mango powder
- 1 teaspoon cumin powder
- Paneer cubes 200 gm
- Onion and capsicum blocks from one capsicum and onion
- Fresh coriander leaves, chopped
Instructions:
1. In a pan, heat 1 tablespoon ghee and sauté 1 inch chopped ginger, 4 cloves of chopped garlic, 1 Bayleaf, 1 inch cinnamon, 3 cloves, and 2 chopped green chilies. Fry until aromatic.
2. Add chopped 3 small tomatoes, and 1 large chopped onion. Cook until soft, adding a little water if needed. Once cooked, remove bay leaf and transfer the mixture to a blender and blend into a fine purée. Strain this mixture through a sieve.
3. In another pan, heat 1 teaspoon ghee and add the blended mixture. Cook for a 2 - 3 minutes.
4. Add 1 teaspoon Kashmiri red chili powder, salt to taste, 1 teaspoon dry mango powder, and 1 teaspoon cumin powder. Mix well and cook for 5 to 10 minutes.
5. Add paneer cubes and mix. Then, add onion and capsicum blocks. Mix well.
6. Finally, add fresh coriander leaves and serve hot with roti.
